I Do and Do and Do for You Kids

I don’t know if you can make this image out, but that slide reads “Personal Hygiene.” Like in “How to wash your hands.” Or more relevant to my day, “How I just spent 8 hours learning how to wash my hands.” Hint: Using soap and warm water helps.
Although I didn’t learn until later, renting space in a commercial kitchen, and hence getting a health permit to use that facility, also requires you get a Food Safety Certification. The basic facts of which could probably fit on a small laminated card.
Did I mention the $125 fee? The $125 fee on top of the health permit fee, on top of the vehicle vending permit fee, on top of the three or four times I had to schlep over to the Health Department to set that all up? Those funds would have secured a lot of market booth rental time. Ah well, at least I know how to keep hot food hot now.
